Step 1

Make the crispy noodle topping if not using store-bought. Set aside about 1/4 of the fresh or dried egg noodles. Heat 2 inches of vegetable oil in a wok or deep pan to 350 degrees F. If using fresh noodles, spread them on a baking sheet and let dry for 30 minutes, or use dried noodles directly. Fry the noodles in batches for 1-2 minutes until golden brown and crispy, turning once. They will puff slightly and become shatteringly crunchy. Drain on paper towels and set aside. Step 4

Add the fish sauce and palm sugar, stirring to dissolve the sugar. Bring to a boil, then reduce heat to a gentle simmer. Cover partially and cook for 30-40 minutes until the chicken is completely tender and nearly falling off the bone. Skim any foam that rises to the surface. The broth should be rich, creamy, and deeply golden from the turmeric.

Step 5

Cook the noodles. While the chicken simmers, bring a large pot of water to a boil. Cook the remaining fresh egg noodles according to package directions, usually 2-3 minutes, until tender but still slightly chewy. If using dried noodles, follow package instructions. Drain well and divide among serving bowls. Taste the curry broth and adjust seasoning - it should be rich, slightly sweet, and savory. Add more fish sauce for saltiness, more sugar for sweetness, or a squeeze of lime for brightness.

Step 6

Assemble and serve. Place a portion of cooked noodles in each deep bowl. Ladle the hot curry broth generously over the noodles, then add a piece of braised chicken to each bowl. Top with a generous tangle of crispy fried noodles - this is the signature of khao soi and should not be skimped. Garnish with fresh cilantro and fried shallots.
